Throughout the creation of auburn, a shared philosophy on the treatment of ingredients and materials helped forge a bond between Chef Eric Bost and Klein Agency. Cooking with ingredients of inherent quality is integral at auburn—Bost uses an approach that highlights ingredients versus alters them, building on flavors through layering. A simplistic approach was also taken by Klein, the auburn space is filled with raw materials including white oak, limestone, douglas fir, and a treatment of leather by way of vegetable tan. Auburn nods to the terroir of Los Angeles’ natural environment by use of locally sourced ingredients and materials. Uncomplicated, honest, texturally rich, and layered elements can be found on each plate and throughout the space itself.
